Strawberry Chamomile Tea Popsicles





Summertime doesn't conjure up images of sipping a cup of tea, but busy, hot days still call for chamomile.

Enter tea popsicles. The perfect way for littles and bigs alike to cool off and wind down after dinner or whenever a sense of calm is needed.


This is treat can also be given so tummy troubles. A sweet way to soothe bellies. M A K E 1 tbsp dried chamomile 8 oz water, boiling 2 c strawberries, chopped 2-4 tbsp honey Pour just boiling water over chamomile. Cover and steep for 5 minutes. Strain and reserve. In a saucepan, cook strawberries with a teeny bit of water over medium heat for 5 minutes. Stir regularly. Turn off heat and stir in honey and tea. Blend until smooth in a Vitamix or blender. Pour into molds and freeze for at least 6 hours. Roughly makes 6 pops

P.S. Don't mind the dirt manicure. From now through fall, I am in and out of the garden, sometimes only stopping for a much needed popsicle.
